Taco bowl in 30 mins 🌮 Inspiration for healthy vegan taco bowl – weeknight style that you can make with almost any leftover ingredients. I made this “taco meat” with finely chopped vegetables and lentils.
* 1/2 cauliflower
* 240g. lentils, cooked (1 can)
* 200g. brown mushrooms
* 2 cloves of garlic
* 1 onion
* 2 teaspoons of cumin
* 3 teaspoons of paprika
* 1 teaspoon chili flakes
* 3 tablespoons of salsa, spicy
* Salt and pepper
Wash and finely chop the cauliflower, mushrooms, garlic, and onions. Cook garlic and mushrooms on a pan with some oil at medium heat. Add the spices. Add the mushrooms and cauliflower. Drain the lentils, and add these too. Cook 10-15 mins until it gets brown. Taste with salsa, salt, and pepper.
Serve in bowls with salad, nachos chips, salsa, corns, black beans, and lime. 💛
