Mushroom Pasta Bake 🍂 Sunday comfort food at its best. For me, It’s now that time of year when all I want to be cooking, eating, and sharing is comfort food recipes! This one is made with creamy onions, pasta, and mushrooms.

* 2 tablespoons of plant butter
* 2 onions
* 2 cloves of garlic
* 1 tablespoon of soy sauce
* 200g. Mushrooms
* 1 teaspoon of thyme
* 600 ml. Vegetable broth
* 1/2 cup of soy cream
* 300g. pasta
* 200g. Vegan cheese
* Black pepper

Preheat the oven to 400 degrees F.
Melt the plant butter in a large pot. Add chopped onions and garlic. Add soy sauce, chopped mushrooms, and thyme. Season with pepper, add vegetable broth, soy cream, and pasta. Cook in 8-10 minutes. Stir frequently until the pasta is al dente. Add half of the cheese to the pot and stir. Transfer the pasta to a baking dish/tray. Top with the remaining vegan cheese. Tip: If you use vegan cheese, let it soak in warm water for 10-15 mins before using (for better melting). Bake the tray in the oven for 12-15 min until the cheese has melted. Serve with red wine and fresh thyme!
