One tray dinner. Healthy and full of potatoes, leeks, and crispy oven-baked eggplants + dill dressing that reminds me a little of spring! Everything is mixed in one tray and baked in the oven for 40 min.
* 1 eggplant
* 3,4 cups of plant milk
* 1/2 cup of flour
* 1 teaspoon of paprika
* 1/2 teaspoon of chili (optional)
* Salt and pepper
* 1,5 cup of panko breadcrumbs
Preheat the oven at 200°C hot air. Chop the eggplant in slices and place on a baking tray. Bake for 10 min.
Make a dough of plant milk, flour, paprika, chili. Dip each eggplant slice in the dough + breadcrumbs. Save on a plate and make the vegetables.
On the baking tray add potatoes and drizzle with olive oil, salt, and pepper. Bake for 20 mins.
Take out the tray and add leeks + eggplant in the middle. Bake for 20 more mins. Serve the vegetables with dill + garlic dressing.
