Easy, red hummus with a vibrant color full of the flavor of red peppers.
* 3 red snack peppers
* 240g. chickpeas, cooked
* 1/2 cup of sun-dried tomatoes
* 2 cloves of garlic
* 3 tablespoons of tahini
* 1 tablespoon of olive oil
* 1 teaspoon of cumin
* Juice from 1/2 lemon
* Salt and pepper
Preheat the oven at 200ºC (390ºF). Chop the snack pepper into small pieces, place it on a baking tray, cover it with 2 tablespoons of olive oil, salt, and pepper. Cook for 20 mins.
In a food processor add the baked peppers + all the best ingredients. Puree the mixture until smooth, scraping down the sides if necessary. If the hummus is too thick for your liking, thin with water or extra olive oil.
