This simple salad with homemade Hasselback potatoes recipe
• 1 kg organic potatoes
• 50g plant butter
• 2 tablespoons fresh thyme
• 1,5 teaspoon sea salt
Wash the potatoes, cut off a thin slice of the bottom (for more stability). From the top make a halfway cut through or 2/3 into thin slices in all potatoes. Add butter on top and drizzle with thyme and salt. (Various toppings can be added on top). Bake in the oven at 200c in 45-50 minutes.
Serve in a salad bowl like this with carrots, spinach, fried cabbage, frozen blackberries, dressing – and be generous with some extra salt on top!
