Easy  Healthy Vegetarian Recipes

* 1 onion
* 2 cloves of garlic
* 2 teaspoons of curry
* 3 teaspoons of paprika
* 300g. Sweet potatoes
* 250g. lentils (or 1 can)
* 600 ml. Water
* 1 vegetable broth, cube
* 1 tablespoon of soy sauce
* 1-2 tablespoons of red Thai curry paste
* 3 tablespoons of tomato puree
* 1 can of coconut milk
* 1 handful of spinach
* Juice from 1/2 lime
Chickpeas:
* 240g. Chickpeas, cooked
* 2 teaspoons of paprika
* Olie for frying


Wash and chop the sweet potatoes into small pieces. Chop onions and garlic and cook on a pan with some olive oil.
Add curry, paprika, and sweet potatoes. Wash and add lentils along with water and 1 vegetable broth (cube). Add soy sauce and red thai curry paste. Let it simmer for 10 mins until the potatoes and lentils are cooked. Add tomato paste and coconut milk. Stir until combined and thick. Add a handful of spinach and lime juice. Let it simmer for 5 more mins.
Add the chickpeas to another pan and cook with paprika until crispy.
Serve the lentil curry with cooked rice, crispy chickpeas, flatbreads, and fresh lime.
